Duck curry recipe

A simple and deliciously creamy duck curry ready in just 30 minutes! This recipe can be taken to a whole other level by simple adding ingredients such as sweet potato or pumpkin. Duck can also be substituted for chicken.

  • 3 duck breasts
  • 4 tsp Thai red curry paste
  • 500ml coconut milk
  • 1tbsp brown sugar
  • 2 tbsp Thai fish sauce
  • 125ml chicken stock
  • 4 lime leaves
  • Coriander to garnish
  • Lime wedges to serve




  • Preheat your oven to 200°c
  • Sear the duck breasts in a large frying pan over medium heat. Once seared transfer to the oven and cook for 15 minutes.
  • Heat the vegetable oil in a large saucepan over a medium heat. To the oil add the curry paste and cook for a minute.
  • To the curry paste add coconut milk, brown sugar and fish sauce and bring to boil. Once boiled add chicken stock and lime leaves and return to a gentle simmer.
  • Once cooked, remove the duck breast and slice thinly. Add the slices to the sauce and let simmer for around 10 minutes. Garnish with coriander and serve with steamed rice and a lime wedge.
