Tandoori marinade is so versatile it can be used with a huge variety of ingredients, from fish, chicken to paneer. In this recipe the tandoori powder is created using a mix of spices and herbs, however here at Samee Frozen Foods we sell a ready made tandoori masala mix which can be used also.

Ingredients:

500g Salmon/monkfish cut into thick chunks

1 lemon

Salt to taste

1 tsp ground cumin (jeera powder)

3 garlic cloves chopped

4cm piece of ginger, roughly chopped

1 green chilli, chopped

1 tbsp Greek yoghurt

1 tsp paprika powder

1 tsp garam masala

1 tsp gram flour

1 tbsp fresh coriander chopped

1 tsp vegetable oil

Lemon dressing to garnish

Handful of fresh coriander chopped

 

Method

 

  1. Add to a mixing bowl your choice of fish along with the juice from half a lemon, salt and ground jeera. Mix this well until the fish is coated.
  2. Either crush the ginger and garlic using a pestle and mortar, or blend into a paste and add to the bowl of fish.
  3. Add the chopped green chilli and the remaining marinade ingredients and mix until the fish is completely coated. Leave to marinate for at least 30 minutes. Always marinate in the refrigerator. Never marinate at room temperature as bacteria can quickly multiply on raw meat if it is warm.
  4. Preheat the grill/oven to a medium to high setting. Either skewer the fish or cook directly on baking paper. Grill or bake for 15 minutes until cooked.
  5. Once cooked and cooled squeeze a little lemon juice over the fish and sprinkle with fresh coriander and serve.
